What I eat in a day! Big Breakfast, Kimchi Fried Rice and Curry Udon~

1) I was inspired by some instagrammers to create a breakfast like this. There's corn, baby portobello mushroom, cherry tomatoes, baked beans, bratwurst sausage and a fried egg in the middle. I cooked the corn, mushrooms and tomatoes with balsamic sauce coz anything with that is yummmyyyyy.

2) Korean Kimchi Fried Rice. I had left over kimchi so i decided to make fried rice. This is something i have never tried before. You can add in more ingredients such as corn and mushrooms if you want and cook it with the luncheon meat. This was inspired by Kimchi and Spam Fried Rice Recipe

Korean Kimchi Fried Rice
Ingredients
  • 1 cup Cooked rice
  • 1/4 packet Kimchi
  • 1 small can Luncheon Meat
  • 2 teaspoons Asian Fish Sauce
  • 1 teaspoon Sesame Oil
  • 1 Fried Egg
Instructions

  1. Cook 1 cup of rice in a rice cooker. 
  2. Place kimchi in a bowl with the juice. 
  3.  Heat the oil on the pan and cook the luncheon meat, until brown and crispy. 
  4.  Add the kimchi next and cook for about 4 minutes. 
  5.  Add more oil into the pan and add the rice in. Toss to combine. 
  6.  Pour the kimchi juice in. Add the fish sauce and sesame oil. 
  7.  Top with a fried egg and ready to serve.

3) Japanese Curry Udon. This was inspired by Curry Udon

Japanese Curry Udon
Ingredients
  • 1 Curry cube
  • 2 Baby Corn
  • A few Prawn Wonton
  • 1 Sausage
  • 1 Egg
  • 1 pack Udon
  • 1 stem Chopped Spring Onion
  • 1.5 cup Soup Stock
Instructions

  1. Heat the oil in a medium saucepan, add the sausage and baby corn and fry gently on low heat. 
  2. Add the soup stock and bring to boil. Add the wonton and reduce to medium heat. 
  3. Add the curry roux in pieces. Bring back to boil, reduce heat to low and simmer for 5 minutes. Stir constantly to avoid burning the sauce. 
  4. Bring 2l of water to boil in a pan, boil the udon noodles for 3 minutes then drain. 
  5. Serve the udon with the curry in a bowl, garnished with spring onions.
